Croquetas de Jamón with Cilantro Sauce

Ingredients

  • For the Fried Rice:
  • 3 cups cooked, day-old white rice
  • 2 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 2 cups cooked chicken (shredded or diced)
  • 0.5 cup green onions, chopped
  • 0.5 cup red bell pepper, diced
  • 1 small carrot, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 0.5 tsp black pepper
  • Optional Add-Ins:
  • Shrimp or beef strips
  • Peas or snap peas
  • Cilantro, chopped (for garnish)

Instructions

  1. 1Prepare the Ingredients
  2. 21️⃣ Cook the Rice – If you don’t have day-old rice, cook it fresh and let it cool on a baking sheet for at least 30 minutes before using. 🍚✨
  3. 32️⃣ Prep the Veggies & Chicken – Dice all vegetables and shred or dice the cooked chicken. 🥕🍗
  4. 4Make the Fried Rice
  5. 53️⃣ Heat the Wok – Heat a large wok or skillet over medium-high heat. Add 1 tbsp vegetable oil and swirl to coat. 🥄🔥
  6. 64️⃣ Scramble the Eggs – Pour in beaten eggs and scramble until just set. Remove and set aside. 🥚🔥
  7. 75️⃣ Stir-Fry the Veggies – Add another tablespoon of vegetable oil, then stir-fry garlic, ginger, carrot, and bell pepper until fragrant and tender, about 3 minutes. 🧄🫚✨
  8. 86️⃣ Add the Chicken & Rice – Toss in the chicken and stir to heat through. Add the cooked rice and stir constantly, breaking up any clumps. 🍗🍚🔥
  9. 97️⃣ Season the Rice – Pour in soy sauce, sesame oil, and black pepper. Stir-fry until the rice is evenly coated and heated through, about 2-3 minutes. 🍜🔥
  10. 108️⃣ Finish the Dish – Stir in the scrambled eggs and green onions. Toss everything together until well combined. Remove from heat. 🌿🔥
