Coconut and Pineapple Oatmeal

Ingredients

  • For the Oatmeal Base:
  • 1 cup rolled oats 🌾
  • 1 ½ cups coconut milk 🥥
  • 0.5 cup water
  • 0.5 tsp vanilla extract
  • 0.25 tsp cinnamon
  • 1 tbsp honey or maple syrup 🍯 (optional)
  • For the Toppings:
  • 0.5 cup fresh or canned pineapple, diced 🍍
  • 0.25 cup shredded coconut (toasted for extra crunch) 🥥
  • 0.25 cup chopped almonds or cashews (optional)
  • 1 tbsp chia seeds (optional)
  • 1 tbsp coconut flakes for garnish

Instructions

  2. 2In a pot over medium heat, combine rolled oats, coconut milk, water, vanilla extract, and cinnamon.
  3. 3Stir occasionally and cook for 8-10 minutes until creamy.
  4. 4Add honey or maple syrup if you prefer extra sweetness.

  6. 6Toast shredded coconut in a dry pan over medium heat for 2 minutes, stirring often.
  7. 7Dice the fresh pineapple into small chunks.

  9. 9Divide oatmeal into bowls and top with pineapple, toasted coconut, nuts, and chia seeds.
  10. 10Sprinkle with coconut flakes for extra flavor.
