Coconut Rice Pudding with Cinnamon

Ingredients

  • For the Rice Pudding:
  • 0.5 cup short-grain rice (Arborio or Jasmine) 🍚
  • 1 ½ cups coconut milk 🥥
  • 1 ½ cups water
  • 0.25 cup sugar
  • 0.5 tsp cinnamon
  • 0.5 tsp vanilla extract
  • Pinch of salt
  • For Garnish:
  • 1 tbsp shredded coconut (toasted) 🥥
  • 1 tbsp raisins (optional)
  • Extra cinnamon for dusting

Instructions

  1. 11️⃣ Cook the Rice
  2. 2In a saucepan, combine rice, coconut milk, water, sugar, cinnamon, vanilla, and salt.
  3. 3Bring to a gentle boil, then reduce heat to low.
  4. 4Simmer uncovered, stirring occasionally, for 25-30 minutes until the rice is tender and the mixture thickens.
  5. 52️⃣ Adjust & Serve
  6. 6If pudding gets too thick, add extra coconut milk to reach desired consistency.
  7. 7Remove from heat and let cool slightly.
  8. 83️⃣ Garnish & Enjoy!
  9. 9Serve warm or chilled, topped with toasted coconut, raisins, and a dusting of cinnamon.
