Pollo Guisado with Plantains

Ingredients
- For the Pollo Guisado:
- 1 ½ lbs bone-in, skinless chicken thighs and drumsticks 🍗
- 1 tbsp olive oil
- 0.5 small onion, diced
- 0.5 green bell pepper, diced 🌶️
- 2 cloves garlic, minced
- 2 tbsp sofrito (Puerto Rican seasoning base)
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.5 tsp dried oregano
- 2 tbsp tomato sauce 🍅
- 2 cups chicken broth
- 1 small potato, diced 🥔
- 0.5 cup carrots, sliced 🥕
- 0.25 cup fresh cilantro, chopped 🌿
- 1 bay leaf
- For the Plantains:
- 2 ripe plantains, peeled and sliced 🍌
- 1 tbsp butter or oil
- 0.5 tsp cinnamon (for sweet plantains)
- 0.5 tsp salt (for savory plantains)
Instructions
- 11️⃣ Sear the Chicken
- 2Heat olive oil in a large pot over medium-high heat.
- 3Brown the chicken on all sides for 5 minutes. Remove and set aside.
- 42️⃣ Build the Flavor Base
- 5In the same pot, sauté onions, bell peppers, and garlic for 3 minutes.
- 6Stir in sofrito, salt, black pepper, cumin, paprika, and oregano. Cook for 1 minute.
- 7Add tomato sauce and stir.

- 9Return chicken to the pot and add chicken broth, potatoes, carrots, bay leaf, and half the cilantro.
- 10Cover and simmer over low heat for 45 minutes, stirring occasionally.

- 12For sweet plantains, sauté slices in butter over medium heat for 3 minutes per side, then sprinkle with cinnamon.
- 13For savory plantains, fry slices in oil with a pinch of salt until golden brown.
