Grilled Chicken Wraps with Avocado

Ingredients

  • For the Grilled Chicken:
  • 2 boneless, skinless chicken breasts 🍗
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • Juice of 1 lime 🍋
  • For the Wraps:
  • 4 large flour tortillas 🌯
  • 1 avocado, sliced 🥑
  • 1 cup shredded lettuce 🥬
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup crumbled feta or cotija cheese
  • For the Sauce:
  • 0.25 cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp fresh cilantro, chopped 🌿
  • 1 tsp lime juice 🍋
  • 0.5 tsp garlic powder
  • 0.5 tsp salt

Instructions

  1. 11️⃣ Marinate & Grill the Chicken
  2. 2In a bowl, mix olive oil, salt, pepper, paprika, cumin, garlic powder, and lime juice.
  3. 3Coat chicken breasts in the marinade and let sit for 10 minutes.
  4. 4Grill over medium-high heat for 4-5 minutes per side, until fully cooked (internal temp 165°F).
  5. 5Let rest for 5 minutes, then slice thinly.
  6. 62️⃣ Make the Sauce
  7. 7In a small bowl, mix Greek yogurt (or sour cream), mayonnaise, cilantro, lime juice, garlic powder, and salt.
  8. 83️⃣ Assemble the Wraps
  9. 9Warm the tortillas on a skillet or grill for 30 seconds per side.
  10. 10Spread sauce over each tortilla, then layer lettuce, grilled chicken, avocado, tomatoes, red onion, and cheese.
  11. 11Roll tightly into a wrap and slice in half.
