Croquetas de Pollo (Chicken Croquettes)

Ingredients
- For the Chicken Filling:
- 1 cup cooked, shredded chicken 🐔
- 2 tbsp butter 🧈
- 0.25 cup all-purpose flour
- 0.5 cup milk 🥛
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.25 cup finely chopped onion
- 1 tbsp fresh parsley, chopped 🌿
- For Breading & Frying:
- 1 cup breadcrumbs (plain or panko)
- 2 eggs, beaten 🥚
- 0.5 cup all-purpose flour
- 1 cup vegetable oil (for frying)
- For Serving:
- Fresh lime wedges 🍋
- Garlic aioli or spicy mayo for dipping
Instructions
- 11️⃣ Make the Chicken Filling
- 2In a saucepan, melt butter over medium heat. Add onions and sauté until soft.
- 3Stir in flour and cook for 1 minute, forming a roux.
- 4Slowly add milk, whisking until smooth. Cook until thickened.
- 5Mix in shredded chicken, salt, pepper, paprika, garlic powder, and parsley.
- 6Remove from heat and let the mixture cool. Cover and refrigerate for 1 hour.

- 8Once chilled, roll the mixture into small logs or balls.
- 9Dredge each croquette in flour, then dip into beaten eggs, and coat with breadcrumbs.

- 11Heat oil in a deep pan over medium-high heat (350°F/175°C).
- 12Fry croquettes in batches for 2-3 minutes per side, until golden brown.
- 13Transfer to a paper towel-lined plate to drain excess oil.
