Chicken Milanesa with Cilantro Rice

Ingredients

  • For the Chicken Milanesa:
  • 2 boneless, skinless chicken breasts 🍗
  • 1 cup all-purpose flour
  • 2 large eggs, beaten 🥚
  • 1 cup breadcrumbs (panko or regular)
  • 0.5 cup grated Parmesan cheese 🧀
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder 🧄
  • 0.5 tsp smoked paprika
  • 0.5 cup vegetable oil (for frying)
  • For the Cilantro Rice:
  • 1 cup long-grain white rice 🍚
  • 2 cups chicken broth
  • 0.5 cup fresh cilantro, chopped 🌿
  • 2 tbsp lime juice 🍋
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • For Garnish:
  • Lime wedges 🍋
  • Extra chopped cilantro 🌿

Instructions

  1. 11️⃣ Cook the Cilantro Rice
  2. 2Heat olive oil in a saucepan over medium heat.
  3. 3Add minced garlic and sauté for 30 seconds until fragrant.
  4. 4Add rice and stir to coat, then pour in chicken broth.
  5. 5Bring to a boil, reduce heat, cover, and simmer for 15 minutes until rice is cooked.
  6. 6Remove from heat, fluff with a fork, and stir in chopped cilantro and lime juice.
  7. 72️⃣ Prepare the Chicken Milanesa
  8. 8Place chicken breasts between plastic wrap and pound to ½-inch thickness.
  9. 9Season with salt, pepper, garlic powder, and smoked paprika.
  10. 10Set up a breading station:
  11. 11Bowl 1: Flour
  12. 12Bowl 2: Beaten eggs
  13. 13Bowl 3: Breadcrumbs mixed with Parmesan cheese
  14. 14Dredge each chicken piece in flour → egg → breadcrumb mixture, pressing to coat well.

  16. 16Heat vegetable oil in a large pan over medium-high heat.
  17. 17Fry chicken for 3-4 minutes per side, until golden brown and crispy.
  18. 18Remove and drain on a paper towel.
