Dulce de Leche and Mango Crepes

Ingredients

  • For the Crepes:
  • 1 cup all-purpose flour
  • 2 eggs 🥚
  • 1 cup milk 🥛
  • 0.5 cup water
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 0.5 tsp vanilla extract
  • For the Filling:
  • 0.5 cup dulce de leche 🍮
  • 1 ripe mango, sliced thinly 🥭
  • For Toppings:
  • Powdered sugar ✨
  • Shredded coconut 🥥
  • Whipped cream (optional)

Instructions

  1. 11️⃣ Make the Crepe Batter
  2. 2In a bowl, whisk together flour, eggs, milk, water, melted butter, sugar, and vanilla until smooth.
  3. 3Let the batter rest for 5 minutes.
  4. 42️⃣ Cook the Crepes
  5. 5Heat a non-stick pan over medium heat and lightly grease with butter.
  6. 6Pour ¼ cup of batter, swirling the pan to spread evenly.
  7. 7Cook for 1-2 minutes per side until golden brown.

  9. 9Spread a layer of dulce de leche inside each crepe.
  10. 10Add sliced mango and fold or roll the crepes.
