Arroz Blanco con Costillas (White Rice with Pork Ribs)

Ingredients
- For the Pork Ribs:
- 5 lbs pork ribs, cut into sections 🥩
- 1 tbsp olive oil
- 0.5 cup sofrito (blend of onions, peppers, garlic, and cilantro)
- 3 cloves garlic, minced 🧄
- 1 onion, chopped 🧅
- 1 bell pepper, chopped 🌶️
- 0.5 cup tomato sauce 🍅
- 1 tsp adobo seasoning
- 1 tsp sazon seasoning
- 0.5 tsp cumin
- 0.5 tsp oregano
- 2 bay leaves
- 0.5 cup chicken or beef broth
- 0.5 cup white wine (optional for deeper flavor)
- 0.5 cup green olives 🫒
- Salt & black pepper to taste
- For the White Rice:
- 2 cups long-grain white rice 🍚
- 4 cups water
- 1 tbsp butter 🧈
- 0.5 tsp salt
Instructions
- 11️⃣ Season & Brown the Ribs
- 2In a bowl, season pork ribs with adobo, sazon, cumin, oregano, salt, and black pepper.
- 3Heat olive oil in a large pot over medium-high heat.
- 4Sear the ribs on all sides until golden brown, then remove and set aside.
- 52️⃣ Build the Flavor
- 6In the same pot, sauté sofrito, onion, garlic, and bell pepper until fragrant.
- 7Stir in tomato sauce, bay leaves, broth, and white wine.
- 8Return ribs to the pot, cover, and simmer for 1 hour, stirring occasionally.
- 9Add green olives and cook for another 15 minutes until ribs are tender.

- 11In a separate pot, bring water, butter, and salt to a boil.
- 12Add white rice, reduce heat to low, cover, and cook for 20 minutes until fluffy.
