Bacalaítos with Cilantro Dipping Sauce

Ingredients
- For the Bacalaítos (Cod Fritters):
- 1 cup salted cod (bacalao), rinsed, boiled, and shredded 🐟
- 1 cup all-purpose flour 🌾
- 0.5 tsp baking powder
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp paprika
- 0.5 tsp garlic powder 🧄
- 1 tsp fresh cilantro, chopped 🌿
- 1 cup water
- Oil for frying
- For the Cilantro Dipping Sauce:
- 0.5 cup mayonnaise
- 0.25 cup sour cream
- 2 tbsp lime juice 🍋
- 1 clove garlic, minced 🧄
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp fresh cilantro, chopped 🌿
Instructions
- 11️⃣ Prepare the Cilantro Dipping Sauce
- 2In a bowl, mix mayonnaise, sour cream, lime juice, garlic, salt, black pepper, and cilantro.
- 3Stir well and refrigerate for at least 15 minutes to enhance the flavors.
- 42️⃣ Make the Bacalaítos Batter
- 5In a bowl, whisk together flour, baking powder, salt, black pepper, paprika, and garlic powder.
- 6Slowly add water, stirring until you get a smooth, slightly runny batter.
- 7Fold in shredded cod and cilantro.

- 9Heat oil in a deep pan over medium-high heat.
- 10Drop spoonfuls of batter into the hot oil, frying 2-3 minutes per side until golden brown.
- 11Remove and drain on a paper towel.
