Sweet Corn Arepas with Honey Butter

Ingredients
- 2 cups fresh corn kernels (or canned, drained) 🌽
- 1 cup pre-cooked cornmeal (masarepa)
- 0.5 cup whole milk 🥛
- 1 tbsp melted butter 🧈
- 1 tbsp honey 🍯
- 0.5 tsp salt 🧂
- 0.25 cup shredded queso blanco (optional) 🧀
- 1 tbsp vegetable oil (for cooking)
- For the Honey Butter:
- 2 tbsp butter, softened 🧈
- 1 tbsp honey 🍯
- Pinch of cinnamon (optional)
Instructions
- 1Blend the Corn – In a blender or food processor, pulse the corn kernels until slightly smooth but still textured.
- 2Mix the Dough – In a bowl, combine the blended corn, cornmeal, milk, melted butter, honey, salt, and queso blanco (if using). Mix until a thick dough forms. Let rest for 5 minutes.
- 3Form the Arepas – Divide the dough into 4-6 portions and shape them into round, thick discs (about ½-inch thick).
- 4Cook – Heat a skillet over medium heat with a bit of oil. Cook the arepas for about 4-5 minutes per side, until golden brown and crispy.
- 5Prepare the Honey Butter – Mix the softened butter with honey and a pinch of cinnamon for extra flavor.
- 6Serve & Enjoy – Spread the honey butter over warm arepas and enjoy them with coffee or fresh fruit!
