Instructions

- 2In a large pot, heat olive oil over medium-high heat. Sear the beef on all sides until browned (about 3–4 min per side). Remove and set aside.

- 4In the same pot, lower heat to medium. Add onion, garlic, bell pepper, and tomato. Sauté until soft and fragrant (about 5–7 minutes).

- 6Stir in tomato paste, cumin, paprika, and beef broth. Return the seared beef to the pot. Cover and simmer on low for about 2–2.5 hours, or until the beef is tender and shreds easily with forks.
