Maduros (Sweet Plantains) with Queso Blanco

Ingredients
- 2 ripe plantains (skin should be deep yellow with black spots)
- 1 pinch of salt
- 2 tbsp vegetable oil (for frying)
- 0.5 cup queso blanco, crumbled or sliced thin (can sub with mozzarella if needed)
Instructions
- 1Peel and Slice the ripe plantains diagonally into ½-inch thick pieces. 🍌
- 2Heat oil in a skillet over medium heat. Add the plantains in a single layer.
- 3Fry until golden brown and caramelized, about 3–4 minutes per side. Flip gently with tongs. 🔄
- 4Once done, place plantains on a paper towel to remove excess oil.
- 5While still warm, sprinkle with a pinch of salt and top with queso blanco.
- 6Optional: Pop in the microwave or under the broiler for 20 seconds to slightly melt the cheese. 🔥🧀
