Carne Guisada with Cilantro Garlic Rice

Ingredients
- For the Carne Guisada:
- 2 lbs beef chuck or stew meat, cubed 🥩
- 2 tbsp oil 🛢️
- 1 medium onion, chopped 🧅
- 4 cloves garlic, minced 🧄
- 1 green bell pepper, chopped 🫑
- 1 tomato, diced 🍅
- 2 tbsp tomato paste 🍅
- 2 cups beef broth 🥣
- 1 tsp cumin 🌿
- 1 tsp oregano 🌿
- 1 bay leaf 🍃
- Salt and pepper to taste 🧂
- Optional: 1 small potato, cubed 🥔
- For the Cilantro Garlic Rice:
- 1 cup long grain white rice 🍚
- 2 cups water 💧
- 1 tbsp oil or butter 🧈
- 2 garlic cloves, minced 🧄
- 0.33 cup chopped cilantro 🌿
- Salt to taste 🧂
Instructions
- 1Sear the Beef:
- 2Heat oil in a large pot over medium heat. Brown the beef in batches until golden on all sides. Remove and set aside. 🔥🥩
- 3Sauté Veggies:
- 4In the same pot, add a bit more oil if needed. Sauté onions, garlic, and bell pepper until softened. Add diced tomato and tomato paste, cook for 3 more minutes. 🧅🧄🫑
- 5Simmer to Perfection:
- 6Return the beef to the pot. Add beef broth, cumin, oregano, bay leaf, and season with salt and pepper. Cover and simmer on low for 1.5 hours until the beef is fork-tender. Add potatoes if using during the last 30 minutes. 🍃⏳
- 7Make the Rice:
- 8In a saucepan, sauté garlic in oil until fragrant. Add rice and stir for 1-2 min. Pour in water and salt. Bring to a boil, then lower heat and cover. Cook for 18 minutes. Once done, fluff with a fork and mix in cilantro. 🍚🌿
- 9Serve it Up:
- 10Scoop the fluffy green rice onto a plate and ladle the rich, savory carne guisada right on top or to the side. 🎉🍛
