Sweet Plantain and Queso Fresco Pancakes

Ingredients
- 2 ripe sweet plantains 🍌 (peeled and mashed)
- 1 cup all-purpose flour 🌾
- 1 tbsp baking powder
- 1 tbsp brown sugar 🍯
- 0.25 tsp salt 🧂
- 0.5 tsp cinnamon 🌰
- 1 cup milk (or oat milk for a twist) 🥛
- 1 egg 🥚
- 0.5 cup queso fresco, crumbled 🧀
- 1 tbsp butter or oil for cooking 🧈
- Optional toppings: extra queso fresco, maple syrup 🍁, or a drizzle of crema
Instructions
- 1In a large bowl, mash the ripe plantains until smooth.
- 2Add the milk and egg to the plantains and whisk until fully combined.
- 3In another bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.
- 4Gradually mix the dry ingredients into the wet ingredients to create a smooth batter.
- 5Fold in the crumbled queso fresco 🧀—don’t overmix!
- 6Heat a nonstick skillet or griddle over medium heat and add butter or oil.
- 7Pour 1/4 cup of batter per pancake and cook for 2–3 minutes on each side or until golden brown.
- 8Serve warm with extra queso fresco, maple syrup, or a touch of crema. 🍯🧀
