Ingredients

- 1 tbsp olive oil 🫒
- 1 tsp ground black pepper 🖤
- 0.25 cup orange juice 🍊
- 0.25 cup lime juice 🍋
- 2 tbsp white vinegar
- For the Yuca con Mojo 🥥
- 2 lbs yuca (cassava), peeled and cut into chunks
- 4 garlic cloves, thinly sliced
- 0.25 cup olive oil 🫒
- 0.25 cup lime juice 🍋
- Salt to taste
Instructions
- 1Marinate the Pernil
- 2Score the pork skin and fat, creating small slits. Mix all marinade ingredients and rub generously into every crevice. Cover and refrigerate overnight 💤.
- 3Roast It Slow
- 4Preheat oven to 325°F (163°C). Place pork in a roasting pan, skin-side up. Cover with foil and bake for 4 hours. Then uncover, raise heat to 375°F (190°C), and cook another 45 minutes to 1 hour for crispy skin 🔥.
- 5Boil the Yuca
- 6Boil yuca in salted water until fork-tender (about 25–30 minutes). Drain and remove the fibrous core if present.
- 7Prepare Mojo Sauce
- 8Heat olive oil in a small pan, add garlic slices, and lightly sauté. Remove from heat, stir in lime juice and salt. Pour over yuca and toss to coat. 🧄🍋
