Creamy Cornmeal Porridge

Ingredients
- 1 cup yellow cornmeal (fine or medium grind) 🌽
- 4 cups water 💧
- 1 ½ cups evaporated milk 🥛
- 0.25 cup granulated sugar (adjust to taste) 🍬
- 0.5 tsp salt 🧂
- 1 tsp ground cinnamon 🌰
- 1 tsp vanilla extract 🍦
- 0.5 tsp ground nutmeg (optional) ✨
- 1 tbsp butter (optional for extra creaminess) 🧈
Instructions
- 1In a bowl, mix cornmeal with 1 cup of water until smooth. This prevents lumps later. 😉
- 2In a saucepan, bring the remaining 3 cups of water and salt to a boil.
- 3Slowly stir in the cornmeal mixture while whisking constantly to avoid lumps.
- 4Reduce the heat to low and stir frequently for 10 minutes, until it thickens.
- 5Add evaporated milk, sugar, cinnamon, vanilla, and nutmeg (if using). Stir well.
- 6Simmer for another 5 minutes, stirring often, until it reaches a creamy consistency.
- 7Stir in butter if desired, then remove from heat.
- 8Serve warm — optionally sprinkle with extra cinnamon or a splash of milk. ☁️🥄
