Maduros Breakfast Quesadilla

Ingredients

  • 2 ripe plantains 🍌 (sliced into coins)
  • 4 eggs 🥚 (scrambled)
  • 0.5 cup shredded mozzarella or cheddar cheese 🧀
  • 2 large flour tortillas 🌯
  • 1 tbsp butter 🧈 or cooking oil 🛢️
  • Pinch of salt 🧂

Instructions

  1. 1Prep the Maduros: Peel and slice the ripe plantains into coins. Heat butter in a skillet over medium heat and cook plantains until golden brown on both sides, about 4–5 minutes per side. Set aside. 🍌🔥
