This LechΓ³n Asado (Roast Pork) is juicy, tender, and infused with rich garlic-citrus flavor, with crispy chicharrΓ³n (pork skin) that shatters with every bite. Letβs make the Don Luis Special version, ensuring a perfect balance of smoky, savory, and tangy goodness! π₯
β±οΈ Prep Time: 20 minutes (plus 12+ hours marinating) | Cook Time: 6-7 hours | Servings: 10-12
π Ingredients
For the Pork:
β’ 8-10 lbs pork shoulder (pernil) or whole pig section π
β’ 8 cloves garlic, minced π§
β’ 2 tbsp olive oil π«
β’ 1 tbsp adobo seasoning
β’ 1 tbsp sazΓ³n (with annatto, for color and flavor) β¨
β’ 1 tbsp dried oregano πΏ
β’ 1 tsp black pepper
β’ 1 tsp smoked paprika πΆοΈ
β’ Β½ cup orange juice π
β’ ΒΌ cup lime juice π
β’ Β½ cup mojo sauce (garlic-citrus marinade)
β’ 1 cup chicken or pork broth π²
For the Mojo Marinade:
β’ 4 cloves garlic, minced π§
β’ ΒΌ cup olive oil π«
β’ ΒΌ cup orange juice π
β’ 2 tbsp lime juice π
β’ Β½ tsp salt π§
β’ ΒΌ tsp black pepper
β’ Β½ tsp oregano πΏ
For Serving:
β’ Arroz con gandules (Rice with Pigeon Peas) π
β’ Tostones or yuca fries π
β’ Fresh avocado slices π₯
π₯ Instructions
Prepare the Pork
1οΈβ£ Marinate the Pork β In a bowl, mix garlic, olive oil, adobo, sazΓ³n, oregano, black pepper, paprika, orange juice, lime juice, and mojo sauce. Rub the marinade all over the pork shoulder or whole pig section, making deep cuts to absorb the flavor. Cover and marinate for at least 12 hours (overnight is best). π§π₯
Slow Roast the Pork
2οΈβ£ Preheat the Oven β Set to 300Β°F (150Β°C). Place the pork in a roasting pan, pour in chicken broth, and cover with foil. Roast for 5-6 hours, basting occasionally. ππ₯
3οΈβ£ Crisp the Skin (ChicharrΓ³n!) β Remove foil, increase heat to 450Β°F (230Β°C), and roast uncovered for another 30-45 minutes, until the skin is crispy and golden brown. πβ¨
Make the Mojo Sauce
4οΈβ£ Combine Ingredients β In a small saucepan, heat olive oil, garlic, orange juice, lime juice, salt, pepper, and oregano over low heat for 5 minutes. Set aside. ππ§
Serve & Enjoy
5οΈβ£ Shred or Slice the Pork β Serve hot with extra mojo sauce, arroz con gandules, and tostones! ππ₯
