Don Luis - Lechon Asado (Roast Pork)

πŸ– Lechon Asado (Roast Pork) – Don Luis Special Dinner S01D22πŸ”₯

πŸ“– A Story from Don Luis’ Kitchen

As the pork roasted slowly, its skin turning crispy and golden, Don Luis basted it with garlic mojo and citrus juices. β€œLechΓ³n Asado is the soul of Puerto Rican celebrations,” he said. β€œIt’s about patience, deep flavor, and perfectly crispy skinβ€”a dish that brings families together.”

This LechΓ³n Asado (Roast Pork) is juicy, tender, and infused with rich garlic-citrus flavor, with crispy chicharrΓ³n (pork skin) that shatters with every bite. Let’s make the Don Luis Special version, ensuring a perfect balance of smoky, savory, and tangy goodness! πŸ”₯

⏱️ Prep Time: 20 minutes (plus 12+ hours marinating) | Cook Time: 6-7 hours | Servings: 10-12

πŸ”₯ Instructions

Prepare the Pork

1️⃣ Marinate the Pork – In a bowl, mix garlic, olive oil, adobo, sazΓ³n, oregano, black pepper, paprika, orange juice, lime juice, and mojo sauce. Rub the marinade all over the pork shoulder or whole pig section, making deep cuts to absorb the flavor. Cover and marinate for at least 12 hours (overnight is best). πŸ§„πŸ”₯

Slow Roast the Pork

2️⃣ Preheat the Oven – Set to 300Β°F (150Β°C). Place the pork in a roasting pan, pour in chicken broth, and cover with foil. Roast for 5-6 hours, basting occasionally. πŸ–πŸ”₯

3️⃣ Crisp the Skin (ChicharrΓ³n!) – Remove foil, increase heat to 450Β°F (230Β°C), and roast uncovered for another 30-45 minutes, until the skin is crispy and golden brown. πŸ–βœ¨

Make the Mojo Sauce

4️⃣ Combine Ingredients – In a small saucepan, heat olive oil, garlic, orange juice, lime juice, salt, pepper, and oregano over low heat for 5 minutes. Set aside. πŸŠπŸ§„

Serve & Enjoy

5️⃣ Shred or Slice the Pork – Serve hot with extra mojo sauce, arroz con gandules, and tostones! 🍚πŸ”₯

πŸ’‘ Don Luis’ Tips

βœ”οΈ For deep flavor, marinate for at least 24 hours! ⏳πŸ”₯

βœ”οΈ Want extra-crispy skin? Pour boiling water over the skin before roasting. πŸ–πŸ”₯

βœ”οΈ Make it smoky! Roast the pork over a charcoal grill or caja china for that authentic flavor. πŸ”₯πŸ–

βœ”οΈ Pair it with: A cold beer or fresh passion fruit juice! 🍺🍹
