Don Luis tips
- Active yeast: bloom it in warm water with a teaspoon of sugar. If it doesn't foam in 5 minutes, it's dead — don't proceed.
- Don't rush the kneading. 10 minutes by hand or 6-7 in a stand mixer with a dough hook, until the dough pulls clean from the bowl.
- Double rise: once after kneading, again after shaping the ring. That's where the airy crumb comes from.
- Puerto Rican hot chocolate carries cinnamon and a pinch of salt. Without those two, it tastes like any other cocoa.
Ingredients
- For the Rosca de Reyes Dough:
- 4 cups all-purpose flour 🌾

- For the Mexican Hot Chocolate:

Instructions
