Chocolate Caliente with Quesitos

Story

It was one of those breezy Caribbean mornings, the kind where the coquí frogs finally go quiet and the sun peeks through the window just right. Don Luis, wearing his trusty jean-and-leather apron, was already up, humming an old salsa tune. He reached for the pot and started heating milk slowly, the same way his *abuelita* taught him back in the day. Just then, his youngest grandson tiptoed in with bedhead and big eyes. “Abuelo… is today a chocolate day?” Don Luis chuckled. “Mijo, every day can be a chocolate day if you start it right.” With a wink, he reached into the fridge and pulled out fresh *quesitos*—flaky pastries filled with cream cheese. “Vamos,” he said. “Let’s sweeten this morning with tradition.” 💙

Ingredients

  • For the Chocolate Caliente 🍫
  • 3 cups whole milk 🥛
  • 1 cup evaporated milk 🥫
  • 0.5 cup dark chocolate (chopped or chips) 🍫
  • 0.25 cup semi-sweet chocolate chips 🍪
  • 2 tbsp sugar (adjust to taste) 🍬
  • 0.5 tsp cinnamon 🌰
  • 0.25 tsp vanilla extract 🌿
  • Pinch of salt 🧂
  • For the Quesitos 🥐
  • 1 sheet puff pastry (thawed) 🧈
  • 4 oz cream cheese (softened) 🧀
  • 2 tbsp sugar + extra for sprinkling 🍬
  • 0.5 tsp vanilla extract 🌿
  • 1 egg (for egg wash) 🥚
  • Powdered sugar (optional) ❄️

Instructions

  2. 2In a saucepan over medium heat, warm both milks together until gently simmering. Don’t let it boil!
  3. 3Stir in chopped chocolate and chocolate chips until melted and smooth.
  4. 4Add sugar, cinnamon, vanilla, and a pinch of salt. Stir constantly for 2–3 minutes.
  5. 5Lower heat and whisk until frothy. Serve warm with a sprinkle of cinnamon on top. ☕

  7. 7Preheat oven to 375°F (190°C).
  8. 8Mix cream cheese, sugar, and vanilla until smooth.
  9. 9Cut puff pastry into 4 squares. Add a spoonful of filling in the center of each.
  10. 10Fold corners into the center like an envelope. Seal edges lightly with water.
  11. 11Brush with beaten egg and sprinkle sugar on top.
  12. 12Bake 15–18 minutes until golden and flaky. Let cool slightly, dust with powdered sugar. 🥐
