Chocolate Caliente con Quesitos

It was one de those breezy Caribbean mornings, the kind where the coquí frogs finally go quiet y the sun peeks through the window just right. Don Luis, wearing his trusty jean-y-leather apron, was already up, humming an old salsa tune. Just then, his youngest grandson tiptoed in con bedhead y big eyes. “Abuelo… is today a chocolate day?” Don Luis chuckled. “Mijo, every day can be a chocolate day if you start it right.” con a wink, he reached into the fridge y pulled out fresco *quesitos*—flaky pastries filled con cream queso. “Vamos,” he said. “Let’s sweeten this morning con tradition.” 💙

Ingredientes

  • para the Chocolate Caliente 🍫
  • 3 cups whole leche 🥛
  • 1 cup evaporated leche 🥫
  • 0.5 cup dark chocolate (picado o chips) 🍫
  • 0.25 cup semi-sweet chocolate chips 🍪
  • 2 tbsp sugar (adjust to taste) 🍬
  • 0.5 tsp canela 🌰
  • 0.25 tsp vanilla extract 🌿
  • Pinch de sal 🧂
  • para the Quesitos 🥐
  • 1 sheet puff pastry (thawed) 🧈
  • 4 oz cream queso (softened) 🧀
  • 2 tbsp sugar + extra para sprinkling 🍬
  • 0.5 tsp vanilla extract 🌿
  • 1 egg (para egg wash) 🥚
  • Powdered sugar (opcional) ❄️

Instrucciones

  1. 1Chocolate Caliente
  2. 2In a saucepan over fuego medio, warm both milks together until gently simmering. Don’t let it boil!
  3. 3Stir in picado chocolate y chocolate chips until melted y smooth.
  4. 4Add sugar, canela, vanilla, y a pinch de sal. Stir constantly para 2–3 minutes.
  5. 5Lower calienta y bate until frothy. sirve warm con a sprinkle de canela on top. ☕
  6. 6Quesitos
  7. 7Preheat oven to 375°F (190°C).
  8. 8Mix cream queso, sugar, y vanilla until smooth.
  9. 9Cut puff pastry into 4 squares. Add a spoonful de filling in the center de each.
  10. 10Fold corners into the center like an envelope. Seal edges lightly con water.
  11. 11Brush con beaten egg y sprinkle sugar on top.
  12. 12Bake 15–18 minutes until golden y flaky. Let cool slightly, dust con powdered sugar. 🥐
