Ingredients

  • For the Pork Bits:

  • 0.25 cup sofrito 🌿
  • 0.5 tsp salt 🧂
  • 0.25 tsp black pepper ⚫
  • 0.5 tsp cumin ✨
  • 0.5 tsp sazon seasoning (optional) 🌿
  • 0.25 tsp dried oregano 🍃
  • 0.5 tsp smoked paprika 🌶️
  • 0.5 tsp adobo seasoning ✨
  • 1 can (15 oz) gandules (pigeon peas), drained 🫘
  • 2 ½ cups long-grain rice 🍚
  • 3 cups chicken broth or water 🍲
  • 0.25 cup tomato sauce 🍅
  • 0.5 cup green olives with pimentos 🫒
  • 1 bay leaf 🍃

Instructions
