Huevos Rancheros with Salsa Verde

Ingredients
- For the Salsa Verde:
- 4 tomatillos, husked and rinsed 🍈
- 1 small jalapeño (adjust for spice) 🌶️
- 1 garlic clove 🧄
- 0.25 cup fresh cilantro 🌿
- 2 tbsp lime juice 🍋
- 0.5 tsp salt 🧂
- For the Huevos Rancheros:
- 2 large eggs 🥚
- 2 small corn tortillas 🌽
- 1 tbsp olive oil 🫒
- 0.5 cup refried black beans 🫘
- 0.25 cup crumbled queso fresco 🧀
- 0.25 avocado, sliced 🥑
- Fresh cilantro, for garnish 🌿
- Lime wedges, for serving 🍋
Instructions
- 11️⃣ Make the Salsa Verde
- 2In a saucepan, bring tomatillos, jalapeño, and garlic to a boil in water. Simmer for 5 minutes until soft. Blend with cilantro, lime juice, and salt until smooth. Set aside. 🍈🔥

- 4Heat a skillet over medium heat with a drizzle of olive oil. Fry the corn tortillas for 1-2 minutes per side until crispy. Remove and set aside. 🌽✨

- 6In the same skillet, crack the eggs and cook until whites are set but yolks remain runny, about 3-4 minutes. 🥚🔥
- 74️⃣ Assemble the Huevos Rancheros
- 8Spread refried black beans over each crispy tortilla. Place a fried egg on top, then drizzle generously with the salsa verde. 🫘🥚✨
