Spinach and Mushroom Frittata

Ingredients
- For the Frittata:
- 6 large eggs 🥚
- 0.25 cup milk or heavy cream 🥛
- 0.5 tsp salt 🧂
- 0.5 tsp black pepper
- 0.5 tsp garlic powder 🧄
- 1 tbsp olive oil 🫒
- 0.5 small onion, diced 🧅
- 1 cup baby spinach, chopped 🌿
- 1 cup mushrooms, sliced 🍄
- 0.5 cup shredded mozzarella or feta cheese 🧀
- 1 tbsp fresh parsley or chives, chopped 🌿
- For Serving:
- Toasted bread or avocado slices 🥑🥖
Instructions
- 11️⃣ Whisk the Eggs
- 2In a bowl, whisk eggs, milk, salt, pepper, and garlic powder until smooth. Set aside. 🥚✨
- 32️⃣ Sauté the Vegetables
- 4Heat olive oil in an oven-safe skillet over medium heat. Add onions and mushrooms, cooking until soft (about 5 minutes). Stir in the spinach and cook until wilted. 🧅🍄
- 53️⃣ Add the Eggs & Cook
- 6Pour the egg mixture over the sautéed veggies. Cook on low heat for 5 minutes until the edges start to set. Sprinkle cheese on top. 🧀🔥
- 74️⃣ Bake Until Set
- 8Preheat oven to 375°F (190°C). Transfer the skillet to the oven and bake for 10-12 minutes, or until the center is firm.
