Black Bean and Rice Bowls

Ingredients

  • For the Black Beans:
  • 2 cups cooked black beans (or 1 can, drained and rinsed) 🖤
  • 1 tbsp olive oil 🫒
  • 0.5 onion, diced 🧅
  • 2 cloves garlic, minced 🧄
  • 1 tsp cumin
  • 0.5 tsp smoked paprika 🌶️
  • 0.5 tsp oregano 🌿
  • 0.5 tsp salt 🧂
  • 0.25 cup vegetable broth or water 💦
  • For the Rice:
  • 1 cup long-grain white or brown rice 🍚
  • 2 cups water or vegetable broth 💦
  • 1 tbsp olive oil 🫒
  • 0.5 tsp salt 🧂
  • Toppings:
  • 1 avocado, sliced 🥑
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.25 cup red onion, thinly sliced 🧅
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 lime, cut into wedges 🍋

Instructions

  1. 11️⃣ Cook the Rice
  2. 2In a medium pot, bring water or broth to a boil. Add rice, olive oil, and salt. Reduce heat to low, cover, and simmer for 15-20 minutes (white rice) or 40 minutes (brown rice). Fluff with a fork. 🍚✨
  3. 32️⃣ Prepare the Black Beans
  4. 4Heat olive oil in a pan over medium heat. Sauté onions until soft, then add garlic. Stir in black beans, cumin, smoked paprika, oregano, and salt. Pour in broth or water and simmer for 10 minutes. 🖤🔥
  5. 53️⃣ Assemble the Bowls
  6. 6Divide cooked rice into bowls. Top with seasoned black beans, sliced avocado, cherry tomatoes, red onion, and fresh cilantro. 🍛✨
