Quesadillas de Pernil con Salsa de Guayaba

Ingredients
- For the Quesadillas:
- 2 cups pernil (slow-roasted pork), shredded 🐖
- 1 ½ cups shredded Oaxaca or Monterey Jack cheese 🧀
- 8 small flour or corn tortillas 🌮
- 1 tbsp butter or oil 🧈
- For the Guava Sauce:
- 0.5 cup guava paste 🍈
- 0.25 cup water 💦
- 1 tbsp lime juice 🍋
- 0.5 tsp salt 🧂
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika 🌶️
- For Garnish & Serving:
- 0.25 cup chopped fresh cilantro 🌿
- 0.5 cup sour cream or crema 🥛
- Lime wedges 🍋
Instructions

- 2In a saucepan over low heat, combine guava paste, water, lime juice, salt, black pepper, and smoked paprika. Stir until smooth and slightly thickened. Set aside. 🍈🔥

- 4Place a tortilla on a flat surface. Add shredded pernil and cheese on one half, then fold over. Repeat with remaining tortillas. 🌮🧀
