Dominican Mangú with Garlic Mojo

Ingredients

  • For the Mangú:
  • 3 large green plantains, peeled and sliced 🍌
  • 4 cups water 💧
  • 1 tsp salt 🧂
  • 3 tbsp butter or olive oil 🧈
  • 0.5 cup cold water or milk 🥛
  • For the Garlic Mojo:
  • 2 tbsp olive oil 🫒
  • 4 cloves garlic, minced 🧄
  • 0.5 small red onion, thinly sliced 🧅
  • 0.5 tsp salt 🧂
  • 0.5 tsp black pepper
  • Optional Toppings:
  • 4 slices queso frito (fried cheese) 🧀
  • 4 fried eggs 🍳
  • 4 slices crispy bacon 🥓

Instructions

  1. 11️⃣ Cook the Plantains
  2. 2In a pot, bring water to a boil. Add sliced plantains and salt. Cook until soft (about 15 minutes). 🍌🔥
  3. 32️⃣ Mash the Mangú
  4. 4Drain plantains and mash them while still hot. Add butter and cold water or milk, mixing until smooth and creamy. 🥄✨
  5. 53️⃣ Prepare the Garlic Mojo
  6. 6In a small pan, heat olive oil over medium heat. Sauté garlic and onions until fragrant and soft. Season with salt and pepper. 🧄🔥
  7. 74️⃣ Assemble & Serve
  8. 8Serve Mangú topped with garlic mojo. Add fried cheese, eggs, or bacon for a full Dominican breakfast experience! 🍳🧀
