Ingredients
- For the Mangú:
- 3 large green plantains, peeled and sliced 🍌
- 4 cups water 💧
- 1 tsp salt 🧂
- 3 tbsp butter or olive oil 🧈
- 0.5 cup cold water or milk 🥛
- For the Garlic Mojo:
- 2 tbsp olive oil 🫒
- 4 cloves garlic, minced 🧄
- 0.5 small red onion, thinly sliced 🧅
- 0.5 tsp salt 🧂
- 0.5 tsp black pepper
- Optional Toppings:
- 4 slices queso frito (fried cheese) 🧀
- 4 fried eggs 🍳
- 4 slices crispy bacon 🥓
Instructions
- 11️⃣ Cook the Plantains
- 2In a pot, bring water to a boil. Add sliced plantains and salt. Cook until soft (about 15 minutes). 🍌🔥
- 32️⃣ Mash the Mangú
- 4Drain plantains and mash them while still hot. Add butter and cold water or milk, mixing until smooth and creamy. 🥄✨
- 53️⃣ Prepare the Garlic Mojo
- 6In a small pan, heat olive oil over medium heat. Sauté garlic and onions until fragrant and soft. Season with salt and pepper. 🧄🔥
