Sopa de Plátano (Plantain Soup)

Ingredients
- 2 green plantains, peeled and chopped
- 4 cups chicken or vegetable broth
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 0.5 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp olive oil
- 1 cup coconut milk (optional for a creamy version) 🥥
- 0.5 lime, juiced
- Fresh cilantro for garnish 🌿
Instructions
- 11️⃣ Sauté the Aromatics
- 2Heat olive oil in a pot over medium heat.
- 3Sauté onions until translucent, about 3 minutes. Add garlic, cumin, oregano, salt, and black pepper. Stir for another 30 seconds until fragrant.
- 42️⃣ Simmer the Plantains
- 5Add chopped plantains and stir to coat them in the seasoning.
- 6Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for 20 minutes, or until plantains are soft.

- 8Use an immersion blender to puree the soup until smooth. (Or carefully blend in batches using a regular blender.)
- 9Stir in coconut milk (if using) and lime juice, adjusting seasoning to taste.
