Pollo Guisado with Sweet Plantains

Ingredients
- For the Pollo Guisado:
- 6 bone-in, skinless chicken thighs 🍗
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp cumin
- 1 tbsp olive oil
- 0.5 cup sofrito (blend of onions, peppers, garlic, cilantro)
- 3 cloves garlic, minced
- 1 small onion, diced
- 0.5 green bell pepper, diced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 cup diced tomatoes 🍅
- 1 ½ cups chicken broth
- 1 tbsp tomato paste
- 2 small potatoes, diced 🥔
- 1 carrot, sliced 🥕
- 0.5 cup green olives (optional)
- 0.5 tsp red pepper flakes (optional for heat)
- For the Sweet Plantains:
- 2 ripe plantains, peeled and sliced diagonally 🍌
- 1 tbsp butter or oil
- 0.5 tsp cinnamon (optional)
- 1 tsp brown sugar (for extra caramelization)
Instructions
- 11️⃣ Sear the Chicken
- 2Season the chicken thighs with salt, pepper, and cumin.
- 3Heat olive oil in a large pot or Dutch oven over medium-high heat.
- 4Brown the chicken for 3-4 minutes per side. Remove and set aside.

- 6In the same pot, add sofrito, onion, bell pepper, and garlic. Sauté for 5 minutes until fragrant.
- 7Stir in paprika, oregano, diced tomatoes, tomato paste, and chicken broth. Mix well.

- 9Return the chicken to the pot. Add potatoes, carrots, and olives (if using).
- 10Cover and simmer over low heat for 35 minutes, stirring occasionally.

- 12While the chicken simmers, heat butter or oil in a pan over medium heat.
- 13Add sliced plantains and cook for 3-4 minutes per side until golden. Sprinkle with brown sugar and cinnamon for extra flavor.
