Chuletas Ahumadas con Arroz Mamposteao

Ingredients
- For the Chuletas Ahumadas (Smoked Pork Chops):
- 4 smoked pork chops (chuletas ahumadas)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp black pepper
- 0.5 tsp dried oregano
- 0.5 cup orange juice 🍊
- 1 tbsp apple cider vinegar
- 1 tbsp butter (for finishing)
- For the Arroz Mamposteao:
- 2 cups cooked white rice 🍚
- 1 cup cooked red or black beans (with some liquid)
- 3 slices bacon, chopped 🥓
- 0.5 small onion, diced
- 2 cloves garlic, minced
- 0.5 red bell pepper, diced
- 0.5 green bell pepper, diced
- 1 tsp cumin
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp tomato paste
- 0.25 cup chicken broth
- 1 tbsp cilantro, chopped 🌿
Instructions
- 11️⃣ Marinate & Cook the Chuletas
- 2In a bowl, mix olive oil, garlic powder, smoked paprika, black pepper, oregano, orange juice, and vinegar.
- 3Rub the marinade over the pork chops and let them sit for 10 minutes.
- 4Heat a pan over medium-high heat and sear the chuletas for 4 minutes per side.
- 5Lower the heat, add butter, and baste the chops for 1 minute. Remove from heat and let them rest.
- 62️⃣ Prepare the Arroz Mamposteao
- 7In a large pan, cook the bacon over medium heat until crispy. Remove and set aside.
- 8In the same pan, sauté onion, garlic, and bell peppers for 3 minutes.
- 9Stir in cumin, salt, black pepper, tomato paste, and beans with liquid.
- 10Add cooked rice and mix well. Pour in chicken broth and cook for 5 minutes, stirring occasionally.
- 11Fold in the crispy bacon and fresh cilantro.
