Black Bean and Sweet Potato Quesadillas

Ingredients

  • For the Quesadillas:
  • 2 medium sweet potatoes, peeled and diced 🍠
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • 1 cup black beans, drained and rinsed
  • 0.5 small onion, diced
  • 1 clove garlic, minced
  • 0.5 tsp chili powder
  • 0.5 cup shredded Monterey Jack or cheddar cheese 🧀
  • 4 large flour tortillas 🌯
  • 1 tbsp butter or additional oil (for cooking)
  • For Serving:
  • Sour cream or Greek yogurt
  • Fresh cilantro, chopped 🌿
  • Salsa or hot sauce

Instructions

  1. 11️⃣ Roast the Sweet Potatoes
  2. 2Preheat oven to 400°F (200°C).
  3. 3Toss diced sweet potatoes with olive oil, salt, cumin, and smoked paprika.
  4. 4Spread on a baking sheet and roast for 20 minutes, until tender. Mash slightly when done.
  5. 52️⃣ Prepare the Black Bean Mixture
  6. 6In a pan over medium heat, sauté onions and garlic for 2-3 minutes until soft.
  7. 7Add black beans and chili powder, stirring for 3 minutes. Remove from heat.
  8. 83️⃣ Assemble the Quesadillas
  9. 9Spread mashed sweet potatoes onto one half of each tortilla.
  10. 10Add the black bean mixture and sprinkle with shredded cheese.
  11. 11Fold the tortilla in half, pressing gently.
  12. 124️⃣ Cook Until Crispy
  13. 13Heat butter or oil in a skillet over medium heat.
  14. 14Cook each quesadilla for 2-3 minutes per side, until golden brown and crispy.

  16. 16Slice into triangles and serve with sour cream, salsa, and fresh cilantro.
