Shrimp Tacos with Cilantro Lime Sauce

Ingredients

  • For the Shrimp:
  • 1 lb large shrimp, peeled and deveined 🍤
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • Juice of 1 lime 🍋
  • For the Cilantro Lime Sauce:
  • 0.5 cup Greek yogurt or sour cream
  • 0.25 cup mayonnaise
  • 1 clove garlic, minced
  • 0.5 cup fresh cilantro, chopped 🌿
  • Juice of 1 lime 🍋
  • 0.5 tsp salt
  • 0.25 tsp cumin
  • For the Tacos:
  • 8 small corn or flour tortillas 🌮
  • 1 cup shredded cabbage or lettuce
  • 0.5 small red onion, thinly sliced
  • 0.5 cup crumbled cotija cheese (optional)
  • Extra lime wedges for serving 🍋

Instructions

  1. 11️⃣ Marinate & Cook the Shrimp
  2. 2In a bowl, toss shrimp with olive oil, paprika, cumin, garlic powder, chili powder, salt, black pepper, and lime juice.
  3. 3Heat a skillet or grill pan over medium-high heat.
  4. 4Cook shrimp for 2 minutes per side, until pink and slightly charred. Remove from heat.
  5. 52️⃣ Prepare the Cilantro Lime Sauce
  6. 6In a small bowl, whisk together Greek yogurt, mayonnaise, garlic, cilantro, lime juice, salt, and cumin.
  7. 7Blend for a smoother texture or leave it chunky for a rustic feel.
  8. 83️⃣ Assemble the Tacos
  9. 9Warm the tortillas in a dry skillet for 30 seconds per side.
  10. 10Layer each tortilla with shredded cabbage, shrimp, sliced onions, and a drizzle of cilantro lime sauce.
  11. 11Sprinkle with cotija cheese and serve with extra lime wedges.
