Tostones with Garlic Mojo Sauce

Ingredients

  • For the Tostones:
  • 2 large green plantains, peeled and sliced into 1-inch rounds
  • 0.5 cup oil (for frying)
  • 0.5 tsp salt
  • 0.5 tsp garlic powder
  • For the Garlic Mojo Sauce:
  • 3 cloves garlic, minced
  • 0.25 cup olive oil
  • 2 tbsp fresh lime juice 🍋
  • 1 tbsp orange juice 🍊
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley, chopped 🌿

Instructions

  1. 11️⃣ Fry the Plantains
  2. 2Heat oil in a skillet over medium heat.
  3. 3Fry plantain slices for 3 minutes per side until lightly golden. Remove and drain.
  4. 42️⃣ Smash & Fry Again
  5. 5Using a tostonera (or the bottom of a cup), flatten each fried plantain slice.
  6. 6Return to hot oil and fry again for 2 more minutes per side, until crispy.
  7. 7Sprinkle with salt and garlic powder.
  8. 83️⃣ Make the Mojo Sauce
  9. 9In a small pan, heat olive oil over low heat.
  10. 10Add garlic and cook for 30 seconds until fragrant.
  11. 11Stir in lime juice, orange juice, salt, and pepper. Simmer for 1 minute.
  12. 12Remove from heat and mix in fresh parsley.
  13. 134️⃣ Serve & Enjoy!
  14. 14Plate the tostones with a side of garlic mojo sauce for dipping.
