Ingredients
- For the Salad:
- 1 cup black beans, drained and rinsed 🖤
- 1 cup corn kernels (fresh, canned, or frozen) 🌽
- 0.5 small red onion, finely diced
- 0.5 red bell pepper, diced
- 0.5 cup cherry tomatoes, halved 🍅
- 1 small avocado, diced 🥑
- 0.25 cup fresh cilantro, chopped 🌿
- For the Dressing:
- 2 tbsp olive oil
- Juice of 1 lime 🍋
- 1 tsp honey (or maple syrup for vegan option)
- 0.5 tsp cumin
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions

- 2In a large bowl, combine black beans, corn, red onion, bell pepper, cherry tomatoes, avocado, and cilantro.
