Chicken Milanesa with Roasted Vegetables

Ingredients

  • For the Chicken Milanesa:
  • 2 boneless, skinless chicken breasts, pounded thin 🍗
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs, beaten 🥚
  • 1 cup breadcrumbs (panko or traditional)
  • 0.5 cup grated Parmesan cheese 🧀
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp oregano
  • 0.5 cup oil (for frying)
  • For the Roasted Vegetables:
  • 1 zucchini, sliced 🥒
  • 1 red bell pepper, sliced 🌶️
  • 1 small sweet potato, diced 🍠
  • 1 small red onion, sliced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Italian seasoning
  • For Serving:
  • Lemon wedges 🍋
  • Fresh parsley, chopped 🌿

Instructions

  1. 11️⃣ Prepare the Roasted Vegetables
  2. 2Preheat oven to 400°F (200°C).
  3. 3Toss zucchini, bell pepper, sweet potato, and onion with olive oil, salt, black pepper, and Italian seasoning.
  4. 4Spread on a baking sheet and roast for 25 minutes, flipping halfway.
  5. 52️⃣ Prepare the Chicken Milanesa
  6. 6Set up three bowls: one with flour, salt, and pepper; one with beaten eggs; one with breadcrumbs, Parmesan, paprika, garlic powder, and oregano.
  7. 7Coat each chicken breast in flour, then dip into eggs, and finally coat with the breadcrumb mixture.
  8. 8Heat oil in a skillet over medium-high heat.
  9. 9Fry chicken for 3-4 minutes per side, until golden brown and crispy.
  10. 10Drain on paper towels.
