Sweet Potato and Spinach Wraps

Ingredients

  • For the Roasted Sweet Potatoes:
  • 2 medium sweet potatoes, peeled and diced 🍠
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.25 tsp black pepper
  • For the Spinach Filling:
  • 2 cups fresh spinach, chopped 🌿
  • 0.5 small onion, diced
  • 1 clove garlic, minced
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • For the Wraps:
  • 4 large flour tortillas 🌯
  • 0.5 cup crumbled feta or goat cheese (optional) 🧀
  • 0.5 avocado, sliced 🥑
  • 0.25 cup Greek yogurt or hummus (for spread)
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 tbsp fresh lime juice 🍋

Instructions

  1. 11️⃣ Roast the Sweet Potatoes
  2. 2Preheat oven to 400°F (200°C).
  3. 3Toss sweet potatoes with olive oil, salt, smoked paprika, cumin, and black pepper.
  4. 4Spread on a baking sheet and roast for 25 minutes, flipping halfway.
  5. 52️⃣ Sauté the Spinach
  6. 6Heat olive oil in a pan over medium heat.
  7. 7Sauté onions and garlic for 2 minutes until fragrant.
  8. 8Stir in chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  9. 93️⃣ Assemble the Wraps
  10. 10Warm tortillas in a dry skillet for 30 seconds per side.
  11. 11Spread a layer of Greek yogurt or hummus over each tortilla.
  12. 12Add roasted sweet potatoes, sautéed spinach, avocado slices, and crumbled cheese.
  13. 13Sprinkle with fresh cilantro and drizzle with lime juice.
  14. 14Roll tightly and slice in half.
