Pernil Sandwiches with Plantain Chips

Ingredients

  • For the Pernil Sandwiches:
  • 2 cups cooked pernil (slow-roasted pork), shredded 🍖
  • 1 tbsp olive oil
  • 0.5 small onion, sliced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 4 sandwich rolls (preferably Cuban or French bread)
  • 0.25 cup mayonnaise
  • 2 tbsp yellow mustard
  • 0.5 cup dill pickles, sliced 🥒
  • 4 slices Swiss or provolone cheese 🧀
  • For the Plantain Chips:
  • 2 green plantains, peeled and thinly sliced 🍌
  • 0.5 cup vegetable oil (for frying)
  • 0.5 tsp salt

Instructions

  1. 11️⃣ Prepare the Pernil Filling
  2. 2Heat olive oil in a pan over medium heat.
  3. 3Sauté sliced onions for 2 minutes until softened.
  4. 4Add shredded pernil, salt, and black pepper. Stir well and cook for 3 minutes until warmed through.
  5. 52️⃣ Assemble the Sandwiches
  6. 6Slice sandwich rolls in half and lightly toast them.
  7. 7Spread mayonnaise and mustard on each roll.
  8. 8Layer pernil, sliced pickles, and Swiss or provolone cheese.
  9. 9Press the sandwich lightly before serving.

  11. 11Heat vegetable oil in a skillet over medium heat.
  12. 12Fry plantain slices for 1-2 minutes per side, until golden and crispy.
  13. 13Drain on paper towels and sprinkle with salt.
