Guava BBQ Chicken with Arroz con Maíz

Ingredients
- For the Guava BBQ Chicken:
- 4 bone-in, skin-on chicken thighs or drumsticks 🍗
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp smoked paprika
- 0.5 tsp garlic powder
- For the Guava BBQ Sauce:
- 0.5 cup guava paste 🍈
- 0.25 cup ketchup
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp honey
- 1 tsp Dijon mustard
- 0.5 tsp cayenne pepper (optional)
- 1 clove garlic, minced
- For the Arroz con Maíz:
- 1 cup long-grain white rice 🍚
- 1 ½ cups chicken broth or water
- 0.5 cup canned or fresh corn kernels 🌽
- 2 tbsp sofrito (Puerto Rican seasoning base)
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- 11️⃣ Prepare the Chicken
- 2Preheat oven to 375°F (190°C).
- 3Rub chicken with olive oil, salt, black pepper, smoked paprika, and garlic powder.
- 4Bake for 30 minutes, flipping halfway.
- 52️⃣ Make the Guava BBQ Sauce
- 6In a small saucepan over medium heat, combine guava paste, ketchup, vinegar, Worcestershire sauce, honey, mustard, cayenne, and minced garlic.
- 7Stir until smooth and simmer for 5 minutes.
- 83️⃣ Glaze & Finish the Chicken
- 9After 30 minutes, brush chicken with guava BBQ sauce and bake for another 10 minutes.
- 10For extra caramelization, broil for 2 minutes until slightly charred.
- 114️⃣ Cook the Arroz con Maíz
- 12Heat olive oil in a pot over medium heat.
- 13Add sofrito and sauté for 2 minutes.
- 14Stir in rice, chicken broth, corn, salt, and pepper.
- 15Bring to a boil, then reduce heat and simmer for 20 minutes, until rice is fluffy.
