Carne Guisada with Roasted Plantains

Ingredients
- For the Carne Guisada:
- 1 ½ lbs beef stew meat, cubed 🥩
- 2 tbsp olive oil
- 0.5 small onion, diced
- 0.5 green bell pepper, diced 🌶️
- 2 cloves garlic, minced
- 2 tbsp sofrito (Puerto Rican seasoning base)
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- 1 tsp dried oregano
- 2 tbsp tomato sauce 🍅
- 2 cups beef broth
- 1 small potato, diced 🥔
- 0.5 cup carrots, sliced 🥕
- 0.25 cup fresh cilantro, chopped 🌿
- For the Roasted Plantains:
- 2 ripe plantains, peeled and sliced 🍌
- 1 tbsp butter, melted
- 0.5 tsp cinnamon
- 0.5 tsp brown sugar
- Pinch of salt
Instructions
- 11️⃣ Sear the Beef
- 2Heat olive oil in a large pot over medium-high heat.
- 3Add beef and brown on all sides for 5 minutes. Remove and set aside.
- 42️⃣ Build the Stew Base
- 5In the same pot, sauté onions, bell pepper, and garlic for 3 minutes.
- 6Stir in sofrito, salt, black pepper, cumin, paprika, and oregano. Cook for 1 minute.
- 7Add tomato sauce and beef broth, then return beef to the pot.

- 9Cover and simmer over low heat for 1 hour, stirring occasionally.
- 10Add potatoes and carrots, then cook for another 30 minutes, until beef is fork-tender.
- 114️⃣ Roast the Plantains
- 12Preheat oven to 400°F (200°C).
- 13Toss plantain slices with melted butter, cinnamon, brown sugar, and salt.
- 14Bake on a lined sheet for 15 minutes, flipping halfway.

- 16Spoon carne guisada over a plate of white rice.
