Garlic Butter Shrimp and Rice Bowls

Ingredients

  • For the Garlic Butter Shrimp:
  • 1 lb large shrimp, peeled and deveined 🍤
  • 3 tbsp butter 🧈
  • 3 cloves garlic, minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.25 tsp red pepper flakes (optional)
  • Juice of ½ lemon 🍋
  • 0.25 cup fresh parsley, chopped 🌿
  • For the Rice:
  • 1 cup long-grain white rice 🍚
  • 1 ½ cups water or chicken broth
  • 0.5 tsp salt
  • 1 tbsp olive oil
  • For Garnishing:
  • 0.5 avocado, sliced 🥑
  • 2 tbsp green onions, chopped
  • Lemon wedges 🍋

Instructions

  1. 11️⃣ Cook the Rice
  2. 2In a small pot, bring water or broth to a boil.
  3. 3Add rice, salt, and olive oil. Cover and reduce heat to low.
  4. 4Simmer for 15 minutes, then remove from heat and fluff with a fork.
  5. 52️⃣ Cook the Garlic Butter Shrimp
  6. 6In a large skillet, melt butter over medium heat.
  7. 7Add minced garlic and sauté for 30 seconds, until fragrant.
  8. 8Stir in shrimp, salt, black pepper, smoked paprika, and red pepper flakes.
  9. 9Cook for 2-3 minutes per side, until shrimp turn pink and opaque.
  10. 10Squeeze fresh lemon juice over shrimp and mix in chopped parsley.

  12. 12Divide rice into serving bowls.
  13. 13Top with garlic butter shrimp, avocado slices, and chopped green onions.
