Chuletas en Salsa de Piña (Pineapple-Glazed Pork Chops)

Ingredients

  • For the Pork Chops:
  • 4 bone-in pork chops 🥩
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • For the Pineapple Glaze:
  • 1 cup pineapple juice 🍍
  • 0.5 cup crushed pineapple
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 clove garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • For Serving:
  • 2 cups cooked white rice 🍚
  • 0.25 cup fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Season & Sear the Pork Chops
  2. 2Pat the pork chops dry and rub with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  3. 3Heat a large skillet over medium-high heat and sear pork chops for 3-4 minutes per side.
  4. 4Remove from skillet and set aside.
  5. 52️⃣ Make the Pineapple Glaze
  6. 6In the same skillet, add pineapple juice, crushed pineapple, brown sugar, honey, soy sauce, vinegar, mustard, cumin, paprika, and garlic.
  7. 7Bring to a simmer over medium heat, stirring occasionally.
  8. 8Stir in the cornstarch slurry and cook for 2-3 minutes, until the glaze thickens.
  9. 93️⃣ Glaze & Finish the Pork Chops
  10. 10Return pork chops to the skillet and coat with the glaze.
  11. 11Cook for 5 minutes, flipping once, until caramelized and cooked through.

  13. 13Plate the glazed pork chops over white rice and drizzle extra sauce on top.
  14. 14Garnish with fresh cilantro and serve warm.
