Pollo Guisado with White Rice

Ingredients

  • For the Pollo Guisado:
  • 1 ½ lbs bone-in, skinless chicken thighs and drumsticks 🍗
  • 1 tbsp olive oil
  • 0.5 small onion, diced
  • 0.5 green bell pepper, diced 🌶️
  • 2 cloves garlic, minced
  • 2 tbsp sofrito (Puerto Rican seasoning base)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 2 tbsp tomato sauce 🍅
  • 2 cups chicken broth
  • 1 small potato, diced 🥔
  • 0.5 cup carrots, sliced 🥕
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 bay leaf
  • For the White Rice:
  • 1 cup long-grain white rice 🍚
  • 1 ½ cups water or chicken broth
  • 0.5 tsp salt
  • 1 tbsp olive oil

Instructions

  1. 11️⃣ Sear the Chicken
  2. 2Heat olive oil in a large pot over medium-high heat.
  3. 3Brown the chicken on all sides for 5 minutes. Remove and set aside.
  4. 42️⃣ Build the Flavor Base
  5. 5In the same pot, sauté onions, bell peppers, and garlic for 3 minutes.
  6. 6Stir in sofrito, salt, black pepper, cumin, paprika, and oregano. Cook for 1 minute.
  7. 7Add tomato sauce and stir.
  8. 83️⃣ Simmer Until Tender
  9. 9Return chicken to the pot and add chicken broth, potatoes, carrots, bay leaf, and half the cilantro.
  10. 10Cover and simmer over low heat for 45 minutes, stirring occasionally.
  11. 114️⃣ Cook the White Rice
  12. 12In a small pot, bring water or broth to a boil.
  13. 13Add rice, salt, and olive oil. Cover and reduce heat to low.
  14. 14Simmer for 15 minutes, then remove from heat and fluff with a fork.

  16. 16Spoon pollo guisado into bowls and top with fresh cilantro.
  17. 17Serve with white rice and enjoy this comforting dish!
