Arroz Guisado con Costillas (Yellow Rice with Pork Ribs)

Ingredients

  • For the Pork Ribs:
  • 1 ½ lbs pork ribs, cut into pieces 🐖
  • 1 tbsp olive oil
  • 0.5 small onion, diced
  • 0.5 red bell pepper, diced 🌶️
  • 2 cloves garlic, minced
  • 2 tbsp sofrito (Puerto Rican seasoning base)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 1 bay leaf
  • 2 cups chicken broth
  • For the Arroz Guisado:
  • 1 cup long-grain white rice 🍚
  • 2 tbsp tomato sauce 🍅
  • 0.5 cup pigeon peas (gandules) or green peas
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp turmeric or achiote powder (for yellow color)
  • 0.5 tsp cumin
  • 0.5 tsp oregano
  • 1 ½ cups water or broth
  • 1 tbsp olive oil
  • 0.25 cup fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Sear & Cook the Pork Ribs
  2. 2Heat olive oil in a large pot over medium-high heat.
  3. 3Brown the pork ribs on all sides for 5 minutes. Remove and set aside.
  4. 42️⃣ Build the Flavor Base
  5. 5In the same pot, sauté onions, bell peppers, and garlic for 3 minutes.
  6. 6Stir in sofrito, salt, black pepper, cumin, paprika, oregano, and bay leaf. Cook for 1 minute.
  7. 7Add chicken broth and return the ribs to the pot. Cover and simmer for 45 minutes, stirring occasionally.
  8. 83️⃣ Cook the Arroz Guisado
  9. 9Once the ribs are tender, stir in tomato sauce, pigeon peas, rice, turmeric, cumin, oregano, and olive oil.
  10. 10Pour in water or broth and stir well. Bring to a boil, then reduce heat to low.
  11. 11Cover and cook for 20-25 minutes, until rice is fluffy and liquid is absorbed.

  13. 13Remove bay leaf and fluff rice with a fork.
  14. 14Garnish with fresh cilantro and serve warm!
