Grilled Shrimp Tacos

Ingredients

  • For the Shrimp:
  • 1 lb large shrimp, peeled and deveined 🍤
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • Juice of 1 lime 🍋
  • For the Lime Crema:
  • 0.5 cup sour cream or Greek yogurt
  • Juice of 1 lime 🍋
  • 1 tbsp fresh cilantro, chopped 🌿
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • For the Tacos:
  • 8 small corn tortillas 🌮
  • 1 cup shredded red and green cabbage 🥬
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.5 avocado, sliced 🥑
  • 0.25 cup crumbled cotija cheese 🧀

Instructions

  1. 11️⃣ Marinate & Grill the Shrimp
  2. 2In a bowl, mix olive oil, salt, black pepper, smoked paprika, garlic powder, cumin, and lime juice.
  3. 3Toss shrimp in the marinade and let sit for 10 minutes.
  4. 4Heat a grill or pan over medium-high heat. Grill shrimp for 2 minutes per side, until pink and slightly charred.
  5. 52️⃣ Make the Lime Crema
  6. 6In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, cilantro, garlic powder, and salt.
  7. 73️⃣ Assemble the Tacos
  8. 8Warm tortillas on a skillet for 30 seconds per side.
  9. 9Fill each tortilla with grilled shrimp, shredded cabbage, cherry tomatoes, avocado slices, and a drizzle of lime crema.
  10. 10Top with crumbled cotija cheese and fresh cilantro.
