Pulled Pork Wraps with Salsa Verde

Ingredients
- For the Pulled Pork:
- 2 lbs pork shoulder (boneless) 🐖
- 1 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp smoked paprika
- 0.5 tsp cumin
- 0.5 tsp garlic powder
- 1 cup chicken broth
- 0.25 cup apple cider vinegar
- 0.5 cup salsa verde (for mixing)
- For the Salsa Verde:
- 6 tomatillos, husked and rinsed 🟢
- 1 jalapeño, deseeded (for mild) or with seeds (for spicy) 🌶️
- 0.25 cup fresh cilantro, chopped 🌿
- 1 garlic clove
- Juice of 1 lime 🍋
- 0.5 tsp salt
- For the Wraps:
- 4 large flour tortillas 🌯
- 0.5 cup shredded lettuce 🥬
- 0.5 avocado, sliced 🥑
- 0.25 cup crumbled queso fresco or cotija cheese 🧀
Instructions
- 11️⃣ Cook the Pulled Pork (Slow Cooker or Oven)
- 2Rub pork with olive oil, salt, black pepper, smoked paprika, cumin, and garlic powder.
- 3Slow Cooker: Place pork in a slow cooker with broth and vinegar. Cover and cook on LOW for 6 hours or HIGH for 4 hours, until tender.
- 4Oven: Preheat oven to 300°F (150°C). Place pork in a covered baking dish with broth and vinegar. Bake for 2.5 hours, basting occasionally.
- 5Once cooked, shred the pork with two forks and mix in ½ cup salsa verde.

- 7Roast tomatillos and jalapeño in a skillet over medium heat for 5 minutes, until slightly charred.
- 8Blend roasted ingredients with cilantro, garlic, lime juice, and salt until smooth.
- 93️⃣ Assemble the Wraps
- 10Warm tortillas on a skillet for 30 seconds per side.
- 11Fill each tortilla with pulled pork, shredded lettuce, avocado slices, and a drizzle of salsa verde.
- 12Sprinkle with queso fresco.
