Pulled Pork and Sweet Plantain Wraps

Ingredients

  • For the Pulled Pork:
  • 2 lbs pork shoulder (boneless) 🍖
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder 🧄
  • 1 cup chicken broth
  • 0.25 cup orange juice 🍊
  • 1 tbsp apple cider vinegar
  • For the Sweet Plantains:
  • 2 ripe plantains, peeled and sliced 🍌
  • 1 tbsp butter 🧈
  • 1 tbsp brown sugar
  • 0.25 tsp cinnamon (optional)
  • For the Wraps:
  • 4 large flour tortillas 🌯
  • 0.5 cup shredded lettuce 🥬
  • 0.25 cup fresh cilantro, chopped 🌿
  • 0.5 cup shredded Monterey Jack cheese 🧀
  • For Garnish:
  • 0.5 avocado, sliced 🥑
  • Lime wedges 🍋

Instructions

  1. 11️⃣ Cook the Pulled Pork (Slow Cooker or Oven)
  2. 2Rub pork with olive oil, salt, black pepper, smoked paprika, cumin, and garlic powder.
  3. 3Slow Cooker: Place pork in a slow cooker with chicken broth, orange juice, and apple cider vinegar. Cover and cook on LOW for 6 hours or HIGH for 4 hours, until tender.
  4. 4Oven: Preheat oven to 300°F (150°C). Place pork in a covered baking dish with broth, juice, and vinegar. Bake for 2.5 hours, basting occasionally.
  5. 5Once cooked, shred the pork with two forks.
  6. 62️⃣ Caramelize the Sweet Plantains
  7. 7Heat butter in a pan over medium heat.
  8. 8Add sliced plantains, brown sugar, and cinnamon.
  9. 9Cook for 3-4 minutes per side, until golden brown and caramelized.
  10. 103️⃣ Assemble the Wraps
  11. 11Warm tortillas on a skillet for 30 seconds per side.
  12. 12Fill each tortilla with shredded pork, caramelized plantains, shredded lettuce, and cheese.
  13. 13Sprinkle with fresh cilantro.

  15. 15Serve warm with avocado slices and a squeeze of fresh lime!
