Grilled Chicken and Veggie Wraps

Ingredients

  • For the Grilled Chicken:
  • 2 boneless, skinless chicken breasts 🍗
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder 🧄
  • Juice of ½ lime 🍋
  • For the Wraps:
  • 4 large flour tortillas 🌯
  • 1 cup shredded lettuce 🥬
  • 0.5 cup cherry tomatoes, halved 🍅
  • 0.5 avocado, sliced 🥑
  • 0.25 cup shredded Monterey Jack or cheddar cheese 🧀
  • For the Avocado Sauce:
  • 0.5 avocado 🥑
  • 0.25 cup Greek yogurt or sour cream
  • 1 tbsp lime juice 🍋
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 1 tbsp fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Grill the Chicken
  2. 2Preheat a grill or grill pan over medium-high heat.
  3. 3Coat chicken breasts with olive oil, salt, black pepper, smoked paprika, cumin, garlic powder, and lime juice.
  4. 4Grill for 5-6 minutes per side, until fully cooked.
  5. 5Remove from heat and let rest for 5 minutes, then slice thinly.
  6. 62️⃣ Make the Avocado Sauce
  7. 7In a bowl, mash avocado until smooth.
  8. 8Mix in Greek yogurt, lime juice, garlic powder, salt, and chopped cilantro.
  9. 93️⃣ Assemble the Wraps
  10. 10Warm tortillas on a skillet for 30 seconds per side.
  11. 11Spread a spoonful of avocado sauce onto each tortilla.
  12. 12Fill with grilled chicken slices, shredded lettuce, cherry tomatoes, avocado slices, and cheese.
  13. 13Roll tightly into a wrap.
