Sweet Potato Tacos with Salsa Verde

Ingredients

  • For the Roasted Sweet Potatoes:
  • 2 medium sweet potatoes, diced 🍠
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.5 tsp cumin
  • For the Salsa Verde:
  • 6 tomatillos, husked and rinsed 🟢
  • 1 jalapeño, deseeded (for mild) or with seeds (for spicy) 🌶️
  • 0.25 cup fresh cilantro, chopped 🌿
  • 1 garlic clove
  • Juice of 1 lime 🍋
  • 0.5 tsp salt
  • For the Tacos:
  • 8 small corn tortillas 🌮
  • 0.5 cup shredded lettuce 🥬
  • 0.5 avocado, sliced 🥑
  • 0.5 cup crumbled queso fresco or feta (optional) 🧀
  • 0.25 cup fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Roast the Sweet Potatoes
  2. 2Preheat oven to 400°F (200°C).
  3. 3Toss diced sweet potatoes with olive oil, salt, black pepper, smoked paprika, and cumin.
  4. 4Spread on a baking sheet and roast for 20-25 minutes, flipping halfway.
  5. 52️⃣ Make the Salsa Verde
  6. 6Roast tomatillos and jalapeño in a dry skillet over medium heat for 5 minutes, turning occasionally.
  7. 7Blend roasted ingredients with cilantro, garlic, lime juice, and salt until smooth.
  8. 83️⃣ Assemble the Tacos
  9. 9Warm tortillas on a skillet for 30 seconds per side.
  10. 10Fill each tortilla with roasted sweet potatoes, shredded lettuce, avocado slices, and crumbled queso fresco.
  11. 11Drizzle with salsa verde and sprinkle with fresh cilantro.
