Black Bean and Corn Tostadas

Ingredients

  • For the Tostadas:
  • 8 small corn tortillas 🌮
  • 1 cup vegetable oil (for frying)
  • 0.5 tsp salt
  • For the Black Bean Spread:
  • 1 can (15 oz) black beans, drained and rinsed 🖤
  • 1 tsp olive oil
  • 0.5 tsp garlic powder 🧄
  • 0.5 tsp cumin
  • 0.25 tsp salt
  • For the Corn Topping:
  • 1 cup corn kernels (fresh, canned, or frozen) 🌽
  • 0.25 cup red bell pepper, diced 🌶️
  • 0.25 cup red onion, finely chopped 🧅
  • 1 tbsp lime juice 🍋
  • 0.25 tsp black pepper
  • For Toppings:
  • 0.5 cup shredded lettuce 🥬
  • 0.5 avocado, sliced 🥑
  • 0.25 cup crumbled cotija or feta cheese 🧀
  • 0.25 cup fresh cilantro, chopped 🌿

Instructions

  1. 11️⃣ Make the Tostadas
  2. 2Heat vegetable oil in a pan over medium heat.
  3. 3Fry each tortilla for 1-2 minutes per side, until crispy and golden.
  4. 4Drain on a paper towel and sprinkle with salt.
  5. 52️⃣ Prepare the Black Bean Spread
  6. 6In a small pan, heat olive oil over medium heat.
  7. 7Add black beans, garlic powder, cumin, and salt, mashing lightly.
  8. 8Cook for 5 minutes, stirring occasionally.
  9. 93️⃣ Make the Corn Topping
  10. 10In a bowl, mix corn, red bell pepper, red onion, lime juice, and black pepper.
  11. 114️⃣ Assemble the Tostadas
  12. 12Spread black bean mixture onto each tostada.
  13. 13Top with corn mixture, shredded lettuce, avocado slices, and crumbled cheese.
  14. 14Garnish with fresh cilantro.

  16. 16Serve immediately with extra lime wedges on the side!
